Kate's Date Slice

In August of last year Barbara sent me her friend's recipe for date bars and they sound delish!


• 125g (or 8 ⅓ tbsp) butter
• 1 tsp baking powder
• 1 cup coconut
• ½ cup walnuts, chopped
• 1 cup dates*
• 1 tbsp icing sugar
• 1 ¼ cup flour
• ½ sugar
• 1 egg

Grease a Swiss roll tin - melt butter - add into beaten egg - combine with rest of the dry ingredients. Mix well. Press into tin. Bake for 30 minutes at 180°C (or 356°F). Cut into small squares in tin. Leave to cool.

* I tend to chop dates and soften in water or apple juice until tender.
