Zuke Noods and Seitan
In lieu of pasta I've recently come to love this whole zucchini noodle craze. I basically brown some seitan (BTW - I think my gluten issues were not gluten after all, thank gawd!) in a pan with a spritz or two of olive oil, toss in some Trader Giotto's marinara sauce, and once it's ready to roll I flip in the noods until they are warm and then pop 'em on a plate. So simple and delicious.
