Vegan Snowy Black Chocolate Loaf Cake

A couple weeks ago Anne's car broke down and I picked her up one evening to help her run errands. No big deal - it's what friends do. Then last night I went over her place to gab and she had made me a vegan chocolate cake! I mean, how sweet is that? Then I took a bite this morning and good LORD - it is scrumptious. Absolutely perfect. Best cake I have ever had. (I ate the entire thing in one day.)


Ingredients:
  • 1½ cups all-purpose flour
  • 1 cup white sugar
  • ¼ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ tsp salt
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1 cup water
Preheat oven to 350° degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.
