Vegan Berry Muffins

Look what Mama Rose whipped up for us tonight! And holy schnikes, were they delicious.


Ingredients

1½ cups whole wheat flour
½ cup all purpose flour
4 tsp baking powder
¼ tsp salt
½ cup brown sugar
½ tsp vanilla extract
½ cup white sugar
1 cup vanilla almond milk
3 tbsp applesauce
1 lemon, zested or 1 tsp lemon juice
1 cup fresh or frozen berries

Directions

Preheat oven to 350 degrees F. Grease or line a 12" muffin pan with liners. Set aside.

In a large bowl, mix flours, sugars, baking powder and salt with a whisk. Add milk ½ at a time and mix with a wooden spoon. Mix in lemon zest, vanilla and applesauce. Stir until fully combined. Gently fold in berries.

Spoon batter into muffin cups, filling about ¾ full. Bake for 22-25 minutes until fully baked. Leave the room and try with all your might to wait until muffins are completely cooled before devouring. This may be difficult.
